To be honest, frosting has never been my strong suit; it’s one of those things that can make all your baking efforts go to pot when you don’t frost well. Simply put, cake Monstrosity, bake Frankenstein, errm …the nice souls will gently say, “Tastes good, just a frosting “miscreation” – well, you get the drift.

That’s why I love, love, love this Kit Kat cake because NO frosting skill is required!

Kit Kat Cake Easy FrostingHonestly, be as messy as you want!

The beauty about this cake is that big strong delicious fortress of Kit Kats which dresses the cake – it is the ultimate camouflage for any frosting bloopers. Frost the cake generously so that the cream holds the Kit Kat well but the frosting itself can be the most unpretty sight and no one would ever know!

This Kit Kat Cake is such a cheerleader and so forgiving, just when you are down and think… that good looking cake with those perfect sides and pretty frosting will elude you forever, the Kit Kat Cake comes along and takes you right up there with the best of them! Delicious, Gorgeous and SO EASY to make!

I made an M&M version of this Kit Kat Cake for my little nephew’s two year old birthday celebration and he loved it! As an alternate cake base, you can also make this Kit Kat Cake using my Chocolate Zucchini Cake for more of that veggie goodness. It will be equally delicious.

No TIPS for this recipe, it’s really that SIMPLE!

Instead how about some Kit Kat Trivia 😊

Do you know …….?

#1   How old is the Kit Kat bar? Founded in 1935 in the UK, this iconic chocolate finger bar is officially 84 this year!

#2   How many Kit Kats are sold in a day? More than 1 billion Kit Kat products are eaten every year in the UK alone – that’s like 564 fingers per second! And worldwide, 17.6 billion Kit Kat fingers are eaten every year!

#3   Did you know there are bakeable Kit Kat bars? Japan came out with bakeable Kit Kat bars in 2015. They’re essentially mini bars covered in dough, and infused with flavors like cheesecake and pudding. Yumms, I would love it if they have bakeable green tea flavor too!. Watch the tutorial here.

#4   Why is Kit Kat so popular in Japan? In Japan, the name Kit Kat closely resembles the term “kitto katsu,” which means “surely win,” so they’re considered good luck there, particularly amongst students ahead of exams. I get that – “Get a Kit Kat, have a break, get good grades”……Yeah, Singaporeans can surely identify with that!

#5   Did you know there are local flavor Kit Kat bars? Yes there are quite a few and Nasi Lemak is one of them! There are also CNY Limited Edition Pineapple Tart Kit Kat and Kit Kat Abundance of Mandarin. Check out RedMart for these unusual flavours!

Gorgeous Kit Kat Cake

This Kit Kat Cake is just GORGEOUS, period! And it’s SO SIMPLE to do! A perfectly chocolatey and gorgeous Kit Kat stunner for any occasion 😊
Level of difficulty: EASY

Ingredients

Cake

    Dry ingredients

    • 1 cup sugar
    • 1 2/3 cup cake flour
    • 3/4 cup unsweetened cocoa powder
    • 1 1/2 tsp baking powder
    • 1 1/2 tsp baking soda
    • 1 tsp fine sea salt

    Wet ingredients

    • 2 eggs
    • 275 ml milk
    • 135 ml oil
    • 275 ml boiling water

    Frosting and Decor

    • 1 1/2 cup heavy cream
    • 2 punnets strawberries
    • 18 two finger Kit Kat bars

    Instructions

    Cake

    • Preheat the oven to 175C/350F. Butter, line and flour two 7" cake tins. (Note: do not use those with removable bases as the batter is too thin and would leak)
    • Combine the dry ingredients into the bowl of a stand mixer. Mix well on the lowest setting until a uniform brown colour. Add the wet ingredients, then turn up the mixer to medium and beat for 2 minutes. Lastly, pour in the boiling water. Add slowly and mix it on low until smooth - batter will be soupy.
    • Divide equally between two cake tins. Bake for 30-40 minutes or until a skewer can be removed from the centre cleanly (mine took 40 min). Leave to cool on a wire rack for 5 minutes in the tins then turn out and cool completely.

    Assembly and frosting

    • Whip the heavy cream on high until stiff peaks. Use a serrated knife, and level any uneven tops of the cakes to create a flat surface.
    • Place the first cake layer gently on a plate or cake board and pipe on a nice thick layer of whipped cream. Layer on the 2nd cake tier and generously cover the whole cake with the whipped cream.
    • Using an offset spatula, spread out the frosting and generally even out the sides. (this is a very forgiving cake; you can do without your perfect straight side frosting as all the imperfections will be covered by the beautiful Chocolate Kit Kat bars).
    • Hull the strawberries flat. Decorate the top of the cake with strawberries, placed tips facing up. Final step - dress with Kit Kats all round the cake and tie a nice ribbon around he Kit Kat wall so that it’s firmly secured.
    • Chill in fridge until it’s time to serve and enjoy 😊

    Glazing the strawberries (optional)

    • Dissolve well 1/2 tsp of gelatine in 2 tbsp of syrup over a bowl of hot water or in a microwave. Once the mixture has cooled, brush the gelatine syrup mixture lightly over the strawberries. This glaze helps to keep them beautiful and glistening and also adds a gentle sweetness to the fruit.
