Tips

#1 Eggs to broth

This recipe makes enough for 1-2 persons but if you are making for a bigger crowd, the easy rule of thumb is 1 egg to 50ml broth / water. So simply do the math as you increase the portion of eggs.

Sieve the egg mixtureEasy egg broth ratio .. sieve for greater silki-ness

#2 Pot size

The beauty of this dish is simple – imagine the wondrous sight of steamy egg brimming over and served piping hot straight off the heat. Hold on to that thought and always choose a pot that is likely to fill up nicely and to the brim once the eggs are fully cooked.

Hot Steamy EggsLove it brimming over!

If the pot is too big, then this brimming over effect would be lost. Nothing like a a pot of bubbling and brimming over silky steamy egg that makes you want to dig in immediately! So choose the pot size well.

#3 Salty much?

I don’t add any salt to this Steamed Egg as I make it with ready made chicken broth which is already tasty. Another good substitute is anchovy broth. If you are using water instead of ready made broth, add salt to your taste.

#4 Condiments

Spring onion and sesame oil are the only condiments added to this dish. And if you were to ask me, I would say Don’t SKIP them.

Sesame oil and spring onionsThe perfect extras

IMHO, these are the two extras that makes this Super Easy Steamed Egg perfection. The spring onions gives texture and adds a nice crunch whilst the sesame oil just notches it up with the savory fragrance of nutty roasted sesame.

#5 Serve it HOT HOT HOT!

If anyone were to ask what’s the other pre-requisite that make this dish perfect, I would say … serve it HOT HOT HOT! This Super Easy Steamed Egg rises beautifully when it is on the stove but once taken off, the rise will subside quickly as it loses heat.

Super Easy Steamed Egg subsided Quickly deflated but still delicious ..

So this is not a dish that should be made ahead and warmed up before serving. I usually put this on the stove when the meal has already begun. When ready to serve, just a quick step away and watch over the stove for 5 minutes and voila, Super Easy Steamed Egg merrily arrives at the dinner table … proudly risen & piping hot, perfect and ready to be consumed.
