Coconut Blue Pea Lime Rice. Fragrant coco-nutty lime rice, beautifully tinged with blue butterfly pea and with just a hint of zesty lime. 

 

This Coconut Blue Pea Lime Rice is an easy, quick-to-do recipe that pairs beautifully with stews, curries or even just a simple fried omelette meal with sambal chilli. Simply delicious and lovely to behold.

 

Why Blue Pea?

Butterfly blue pea or Bunga Telang often used in Peranakan cooking and kuehs, has become a popular superfood in recent times, due to its manifold benefits.

Blue pea is chocked full of antioxidants, promotes brain health and circulation, helps detoxification, enriches skin quality and has anti- inflammatory properties which enhances the immune system.

This Coconut Blue Pea Lime Rice is beautifully streaked with butterfly blue and blue pea goodness. The coconut rice is nutty, light, fluffy and nicely lifted with a hint of lime. We usually make this coconut lime rice to go with our favorite Brazilian Fish Stew. It pairs beautifully with the piquant fish stew and is simple, delicious and so pretty to serve with.

This Coconut Blue Pea Lime Rice is an easy recipe and can be effortlessly made in the rice cooker. 

  • Always use long grain rice. 
  • If cooking on the stove or making different portions, the general rule of thumb is to cook using 1/3 coconut milk and 2/3 water.

Coconut Blue Pea Lime Rice

Coconut Blue Pea Lime Rice. Fragrant coco-nutty lime rice, beautifully tinged with blue butterfly pea and with just a hint of zesty lime.

Ingredients

  • 2 cups long grain rice (rice cooker cup size)
  • 1/4 tsp salt
  • 120 ml coconut milk
  • 250 ml water
  • Juice of half a kaffir lime
  • Handful of fresh coriander (finely chopped)

Instructions

  • Measure 2 cups of long grain rice in the rice cooker pot. Give the rice a thorough rinse.
  • Add 1/4 tsp salt, 120ml coconut milk and 250ml water to the rice and give it a good mix.
  • Set to cook according to the rice cooker timing
  • Once cooked, fluff the rice and mix well. You will see the beautiful blue tinge of the blue pea emerging as the rice is fluffed. Add a handful of finely chopped coriander and squeeze the juice of half a kaffir lime into the rice. Mix it up and serve.
