Easy Fig & Berry Cobbler

This Easy Fig & Berry Cobbler is a keeper. Very easy to prep and always tastes amazing served warm with a scoop of vanilla ice cream. Think freshly baked apple pie and cold ice cream and you get the picture. Except this is so much easier to make than an apple pie. Enjoy.

Ingredients

Fruits

  • 250 g blue berries
  • 5 figs (save 1 for decor on top)
  • 40 g butter (cut into small chunks)
  • 1 tbsp sugar
  • 1 tbsp cornstarch
  • Juice of half a Kaffir lime

Cake batter

  • 1 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 2 1/2 tsp baking powder
  • 1/4 tsp salt
  • 300 ml milk
  • 50 g melted butter
  • Juice of half a Kaffir lime
  • 1 tsp vanilla extract (optional)

Instructions

Fruits

  • Cut 40g butter into small chunks and spread them across the base of the baking dish. Add in the berries, cut figs, 1 tbsp sugar, lime juice and mix it all up. Sprinkle in 1 tbsp cornstarch over all the fruits and mix till well incorporated. Set aside.

Cake batter

  • Add the flour, sugar, baking powder, salt, milk, melted butter, vanilla extract and juice of half a kaffir lime into the mixing bowl. Mix till the batter is smooth and not lumpy. Pour in the batter over the fruits and spread it out evenly. Decorate with the last cut fig on top. Bake at 180C for 40min until risen and golden brown. Remove from oven and let cool for 5 to 10min. Serve hot with a scoop of vanilla ice cream, enjoy.

#1 Fruits: A cobbler is simply a deep dish layer of baked fruit, covered with a thick layer of biscuit-style crust, cake batter, or a crumbly topping.  Any fruit that would be used to make a pie is suitable for a cobbler. You can easily substitute the figs and blueberries with raspberries, black berries, strawberries or sliced apples and pears or even pitted peaches, plums or cherries. Or try mangoes and pineapples for the different texture and flavors. Go with what you love and it can't go wrong.
 
#2 Sugar: I like the sweetness of blueberries and figs and therefore only added 1 tbsp of sugar in this Easy Fig and Berry Cobbler. If the fruits you are using are more tangy and/or not as sweet, you can easily increase the sugar by 1/2 tbsp or more to get to your preferred level of sweetness.
 
#3 Cornstarch: This is added to beautifully thicken the juices of the fruit as it macerates with the lime juice and to give that delicious gooey bottom fruit layer when baked. So if you like jammy gooey fruits in cobbler like us, don’t skip the cornstarch.
 
#4 Cake batter: My kids like an equal balance of crisp cake crust in our cobbler with the jammy fruits . If you are one who likes more jammy fruits than crust then you can simply reduce the batter recipe by 1/4 or 1/3 accordingly. This Easy Fig and Berry Cobbler is such an easy recipe, it can be tweaked here and there to give the cobbler combination as you prefer. IMHO, it is a most forgiving baked dessert.
 
#5 Make ahead: I usually prepare my cobbler fruits and batter one day ahead, keep it cling wrapped and chilled in the fridge. Once it’s dessert time, I simply bake it till golden and serve immediately. 
 
#6 Serving: IMHO this Easy Fig and Berry Cobbler is an effortless party dessert and best enjoyed served warm with a scoop of vanilla ice cream or a dollop of creme fraiche or whipped cream. The hot crisp cakery top studded with jammy baked fruits and served with vanilla ice cream or whipped cream is always an amazing and ooooh-so-delicious combination. 
 
#7 Storage: This Easy Fig and Berry Cobbler is so easy to prep. We always serve it freshly baked with vanilla ice cream and it's so good there are usually no leftovers in this household. If on the off chance there are leftovers, keep it airtight and chilled in the refrigerator and it will last for 1-2 days. To consume, microwave for a couple of minutes to warm up the cobbler and serve. But truth be told, leftover cobbler will never be as good as one freshly baked!
